Freds
Freds is a unique dining experience that is characterised by its farm-to-table philosophy, which is evident not only in the carefully curated menu but also in the thoughtful design and styling of the space.
The atmosphere at Fred's is warm and inviting, with a rustic country home aesthetic that provides the perfect backdrop for enjoying a meal with loved ones. Neutral linen curtains sweep the timber floors, cleverly balancing privacy with the open plan restaurant to create a communal atmosphere that still allows guests to enjoy their own space.
Upholstery is thoughtfully layered throughout the space, with upholstered banquettes and contrasting strap cushions adding an extra layer of warmth and comfort. The use of timber is also a prominent feature of the design, with timber from flooring to joinery of the central kitchen, highlighting the farm-to-table concept. Stone tops elevate the dining experience yet scaled back to avoid overpowering the space. A wholesome paired back design to compliment the wholesome menu.

Mimi's
The design and styling of the Mimi’s/Wills have been thoughtfully approached to complement and incorporate the significant site context. The restaurants' perimeter features generous arched vistas that capture Sydney's breathtaking views and iconic Norfolk Island pines. The loose nook arrangement is a blend of comfort and luxury, featuring plush peach sofas nestled snugly within the deep arches and soft mustard chairs sitting opposite hugging tables dressed in elegant linen drapery.
Furthermore, the arch formation is a recurring motif that informs the framing of internal windows, grand doorways, mirror paneling, and even ceiling concepts. This approach has added a layer of cohesion to the design, creating a seamless flow throughout the venue. To create subtle separation and define specific areas, a combination of flooring materials has been used, forming both formal and informal areas.
Overall, the design and styling of the venue is crafted to blend and translate the natural surroundings into an interior of sophistication and luxury.
